I’m obsessed with Tofu made the proper and fresh way with Nigari and all the good fixins! When I lived in Japan, my assistant principal took me and several other teachers out for an amazing tofu dinner. I was befuddled, curious and at the same time so intrigued with the whole process. It’s an amazing procedure and you see all the chemistry and magic go into play. Fresh Tofu tastes nothing like the store brought brand. It melts in your mouth and is soft and velvety. I am not certain if they have the “make your own tofu” option, but apparently everything is made out of tofu at this restaurant.
